중만생 기능성 당질미 ‘단미’

‘Danmi’: A Medium-late Maturing Sugary Rice

  • ‘Danmi’, a sugary rice (Oryza sativa L.), was developed by the Department of Functional Crops, NICS, RDA in 2008. This variety was derived from a cross between ‘Sugary’ a genetic stock of germplasm as a source of sugary endosperm and ‘Seomjinbyeo’ in summer of 1994. The pedigree of ‘Danmi’ is YR16541-14-3-1-2-1-1-3-1-1 which was designated as ‘Milyang 227’ in 2005. Heading date of ‘Danmi’ is August 19, a medium-late maturing ecotype. The total sugar content of ‘Danmi’ was 21.7% with fructose (1.16%), glucose (7.87%), sucrose (9.69%), maltose (0.52%), and raffinose (2.13%), respectively. The appearance of grain is flat shape with 1,000 grain of brown rice is 16.1g. The yield potential of ‘Danmi’ in brown rice is 2.58MT/ha at ordinary fertilizer level of local adaptability test from 2006 to 2008. The sugary rice ‘Danmi’ would be adaptable to the plain paddy field of middle, honam and yeongnam province of Korea.
최근 쌀의 가공용 수요가 증가 하면서 쌀 가공품의 품질 고 급화 및 다양화를 추구함에 따라, 특수 가공용 품종의 개발이 크게 요구되고 있다. 가공용 쌀의 기본 요건은 쌀 가공에 적 합한 가공적성뿐만 아니라 기능적 또는 영양적으로도 우수한 품질이다. 당질미는 당함량이 일반벼에 비해 높고 성숙기 영 의 모양은 전분축적이 적고 당의 축적이 높아 일반품종과는 달리 납작한 형태이며(Kim et al. 2006), 다양한 기능성 물질 들이 저장되어 있어 특수용도미로서 이용가치가 크다(Lee et al. 2012).
당질미는 배유 내부에서 phytoglycogen 함량이 높아지며 (Nakamura et al. 1997), 당질미의 식물성 glycogen은 물에 쉽게 녹고 소화율이 높은 고 에너지원으로서, gel형성을 위한 천연 식품첨가물로도 이용 가능성이 큰 것으로 보고되고 있 다(Takahashi et al. 2010). 그러나 현재까지 당질미의 phytoglycogen 등 다양한 기능성에 대한 연구가 진행되고 있 으나 활용방안에 대한 정보는 아직 부족한 실정이다. 본 연구 는 국립식량과학원에서 다양한 쌀 가공 산업에 활용이 가능 한 중만생이면서 유리당 함량이 높은 당질미 ‘단미’를 개발한 바 이에 대한 육성경위와 주요특성을 보고하고자 한다.
본 연구는 2006년부터 2008년 3개년간 영남, 호남 및 중부 평야지 6개 지역의 벼 지역적응시험 포장에서 보통기 표준재 배로 대조품종‘남평벼’를 공시하여 수행하였다(RDA 2006, 2007, 2008a). 각 시험지별 재배 방법은 4월 30일에 파종하 여 5월 30일에 30 × 15 cm 재식거리로 주당 3본씩 이앙하고, 시비량은 N-P2O5-K2O = 9-4.5-5.7 kg/10a로 재배 하였다. 이모작 적응성은 6월 1일 파종하여 6월 25일에, 만기재배는 6월 5일 파종하여 7월 1일에 각각 재식거리 30 × 12 cm로 주당 5본씩 이앙 하였다. 기타 재배관리와 품종육성을 위한 주요 농업적 특성, 수량특성, 생리장해, 병해충 저항성 및 품 질분석 조사는 농촌진흥청 신품종개발 공동연구사업 과제 수 행계획서 조사기준에 준하였다(RDA 2008b).
육성경위
‘단미’는 영남작물시험장(현 국립식량과학원 남부작물부)에 서 1994년 하계에 당질미 유전자원인 ‘Sugary’를 모본으로 하 고, 양질이면서 초형, 내병충성 및 수량성 등 재배안정성이 양 호한 ‘섬진벼’를 부본으로 인공교배하여 YR16541의 교배번호 를 부여하였다. ’94 / ’95년 동계에 23개체의 F1 식물체를 양성 하고 1995년 하계에 F2 집단을 전개하여 초형이 양호하고 당질 미 특성이 우수한 41개체를 선발하였고, 이후 F3세대부터는 계 통 육종법으로 F11세대까지 세대를 진전시키면서 당질 함량이 높고 재배안정성이 높은 계통을 선발하였다. 선발된 계통에 대 하여 2005년도에 생산력 검정을 통하여 당질미의 특성이 우수 하면서 안정성이 높은 YR16541-14-3-1-2-1-1-3-1-1를 선발하 여 ‘밀양227호’로 명명하였다. 2006년부터 2008년 3개년간의 지역적응시험을 실시한 결과 중만생종으로, 쌀에서 유리당 함 량이 높은 것으로 평가되어 2008년 12월 농작물 직무육성 신품 종 선정위원회에서 ‘단미’로 품종명을 명명하고 국가품종등재 품종으로 선정하였다. ‘단미’는 중부 및 영호남 내륙 평야 1모 작지에 적응성이 높은 중만생 기능성 당질미 품종이다(Fig. 1).

주요특성

출수기 및 주요 농업적 특성

중부 및 영호남 평야지 보통기 보비재배에서 ‘단미’의 출수 기는 8월 19일로 ‘남평벼’보다 4일 정도 늦은 중만생종이며, 이모작과 만식 재배에서도 각각 8월 31일과 9월 4일로 ‘남평 벼’보다 1 ~ 4일 정도 늦은 편이었다(Table 1). ‘단미’의 간장 은 86 cm로 ‘남평벼’보다 12 cm 정도 큰 편이며, 주당 수수 는 15개로 ‘남평벼’보다 3개 정도 많았으나 이삭당 영화수는 81개로 ‘남평벼’보다 적었다. 특히 배유에서의 광합성 산물인 당이 전분으로 전환이 이루어지지 않아 등숙 비율은 11.3%로 매우 낮았으며, 따라서 현미 천립중 또한 16.1 g으로 매우 가 벼운 편이다(Table 2).

생리장해 및 도복 저항성
‘단미’는 못자리일수 50일묘 이앙시에 불시출수가 되지 않 았으며, 종실에 당 함량이 높기 때문에 수발아는 약한 편이었 다. 본답초기 적고에는 강한 편이며 성숙기의 엽노화는 보통 이고, 내냉성 검정 결과 출수지연일수는 ‘남평벼’보다 2일정 도 적었으나 냉수구 임실율은 ‘남평벼’에 비해 다소 낮았고 유묘 적고는 약한 편이었다. 도복과 관련된 형질로‘단미’는 ‘남평벼’에 비해 좌절중이 적고 3절 간장은 큰 편으로서 도복 지수가 ‘남평벼’보다 높았으나 천립중이 가벼워 포장도복은 발생하지 않았다(Table 3).

병해충 저항성
전국 14개소에서 3년간 실시한 잎도열병 밭못자리 검정에 서‘단미’의 평균 저항성은 7.9로 ‘남평벼’보다 약하였으며, 목 도열병 포장검정에서도 이천에서의 이병수율 58%를 포함하 여 ‘남평벼’보다 발병 정도가 다소 높았다(Table 4). 도열병 내구저항성 검정에서 친화성균주 수는 26개였으며, 파종 회 차별 병반 면적율이 커서 내구저항성은 약한 것으로 나타났 다(Table 5). 흰잎마름병, 줄무늬잎마름병 및 오갈병과 검은 줄오갈병에 약하고, 벼멸구 및 애멸구등 해충에 대한 저항성 은 없다(Table 6).

품질 및 유리당 함량
‘단미’는 배유의 전분축적이 적어 정조 무게가 가볍고 두께 가 얇아서 도정특성을 조사하기 어려운 특성을 가지고 있다. 아 밀로스 함량은 14.4%로 일반 밥쌀용벼에 비해 상대적으로 낮 았으며, 특히 단백질 함량은 9.2%로 상대적으로 높은 편이었다 (Table 7). ‘단미’의 현미 유리당 함량은 Fructose, Glucose, Sucrose, Maltose, 및 Raffinose가 각각 1.16, 7.87, 9.69, 0.52, 및 2.13%로 ‘남평벼’의 총 유리당 함량 3.33%에 비해 6.5배 정 도 높은 21.73%의 총 유리당 함량을 보였다(Table 8).

수량성
‘단미’의 수량성은 2006년부터 2008년 3개년간 실시한 지 역적응시험 보통기 보비재배 6개소에서 현미 수량은 2.8 MT/ha, 만식 및 이모작 재배에서는 2.1 ~ 2.5 MT/ha로서 일 반 메벼인 ‘남평벼’ 대비 약 52% 수준의 상대적으로 매우 낮 은 수량성을 보였으나(Table 9), 이는 등숙기에 종실에 전분 이 축적이 되지 않고 광합성산물인 당이 그대로 배유에 축적 된 결과로 보였다.

적응지역 및 재배상 유의점
‘단미’는 중부 및 영호남 내륙평야 1모작지에 적응하는 중 만생 품종이다. 특히 배유의 유리당 함량이 높아 등숙기 강우 에 의한 수발아로 인한 품질저하가 우려됨으로 주의 하여야 한다. 또한 현미 천립중이 가벼워 탈곡 시 주의를 요하며, 질 소질 비료 과다 사용 시 미질저하, 도복 및 병해충 발생이 우 려되므로 적정 균형 시비하여야 한다. 벼멸구 등 기타 해충에 는 약하므로 적기에 기본방제를 실시하여야 하고 냉수용출답 이나 극만식 재배는 피하는 것이 좋다.
