향기가 있는 흑색찹쌀 신품종 ‘청풍흑향찰’

  • 'Cheongpungheukhyangchal' New aromatic, black pericarp and glutinous rice variety was developed by the rice breeding team of Chungbuk Agricultural Research and Extension Services, in 2012. This cultivar was derived from a cross between 'Shindongjin' as a grain quality source and 'Heugseonchal' as a black glutinous and aromatic source. The donor parent, 'Sindongjin' has been backcrossed one time with recurrent parent 'Heugseonchal' and selected by the pedigree breeding method, until F6 generation. As a result, a promising line, CBR11-2-4-3, was advanced and designated as the name of ‘CBR L3’ in 2009. The maturity period of this cultivar took approximately 168 days from seedling to heading. This cultivar has about 15 tillers per hill and 115 spikelet numbers per panicle. Ripening ratio is about 76.5% and 1000 grain weight is 27.2 g in brown rice. Milled rice of 'Cheongpungheukhyangchal' has trait of glutinous and aromatic endosperm. It has higher anthocyanin content compared to that of black pigmented check cultivar ‘Heugseonchal’. The yield performance of brown rice was 5.39 MT/ha in local adaptability test for three years. ‘Cheongpungheukhyangchal’ is adaptable to central plain and southern mid-mountainous area of Korea.
2016년 전국 벼 재배면적은 797,957ha로 20년만에 무려 25만 ha이상의 사라졌다. 더욱이 쌀 시장이 개방되고, 식생활 패턴 변화로 쌀 소비량 마저 급격히 감소하면서, 산지 쌀값은 전년대비 10%이상 낮아지고, 재고량은 증가하여 10a 당 농가 수익률이 31.8%에 불과한 실정이다. 따라서 소비자의 기호에 맞는 쌀 소비 확대 방안에 대한 연구가 시급한 상황이다(Kim. 2010). 2016년 농협 조사월보에 따르면 우리나라의 쌀 이용 현황은 2014년 국내 총 생산량 424만톤 중 10.8%인 45.7만톤이 가공용 으로 이용된다. 가공용으로 이용되는 종류 및 비율은 떡류 33.3%, 밥류 31.9%, 주류 19.7%, 장류 7.3%, 음식료 2.8%, 과자류 1.2%, 전분류 0.9%, 면류 0.7% 순이었다. 쌀 가공식품에 서 가장 많은 비중을 차지하는 떡류, 주류 개발에 적합한 품종 육성을 위한 가공적성이 높은 품종육성 연구가 중요한 과제이다. 그러나 현재 국립종자원에 품종보호등록 된 벼 품종 389개 중 찰벼나 유색벼 등 가공적성이 높은 품종은 40여개 품종에 불과하 며, 특히 기능성물질 함량이 높고 가공용으로 다양하게 이용될 수 있는 유색벼 품종의 재배면적은 전제 벼 재배면적의 0.5%에 도 못 미치는 3,875ha수준이다. 충북농업기술원에서도 쌀을 이 용한 가공식품 개발을 통한 소비확대를 위해 가공적성이 높은 벼 품종 육성을 위해 많은 노력을 기울여 왔으며, 그 결과 검정색 찹쌀로 가공적성이 높고, 구수한 향기가 매력적인 청풍흑향찰을 육성하여 품종등록하게 되어 쌀 가공산업 분야에 활용도가 매우 높을 것으로 기대된다.
본시험은 2009년에서 2012년까지 4년 동안 중부평야지 와 남부중산간지 3개 지역에서 보통기 표준재배로 대비품종 ‘흑선 찰’과 비교 검토하였다. 재배법은 농촌진흥청 표준재배법에 준 하여 4월 30일에 파종하여 5월 30일에 이앙하였으며, 재식거리 는 30×15cm로 주당3본씩 재식 하였다. 기타 재배방법 및 수량특 성, 생리장해 및 병해충저항성은 조사는 농촌진흥청 신품종개발 공동연구사업 과제수행 계획서 조사기준에 준하여 실시하였다. 향에 대한 관능검사는 현미기로 탈영시켜 현미로 만든 다음 Blind test 방식으로 각각의 현미를 씹어서 느끼는 향을 세분하여 측정하였다. 아밀로그램의 특성분석은 Rapid Visco Analyzer를 이용하여 분석하였다. 안토시아닌과 α-Glucosidase 저해활성 측 정은 각각 Lee 등(2008)과 Wenling 등(1996)의 방법에 따라 측정하였다. 플라보노이드, 폴리페놀함량, ABTs(2,2′-azino-bis- 3-ethylbenzthiazoline-6-sulphonic acid)와 DPPH(1,1-diphenyl -2-picrylhydrazyl) 라디컬소거능은 Kim 등(2011)등의 방법으 로 분석하였다.
육성경위
‘청풍흑향찰’벼는 흑색이고 향기가 있는 찰벼를 육성할 목적 으로 1998년 충북농업기술원에서 양질 다수성인 ‘신동진’에 흑색 향찰벼인 ‘흑선찰’을 각각 모본과 부본으로 인공 교배하여 F1 잡종을 만들고 그 후 ‘99에 F1 잡종에 반복친인 ‘흑선찰’을 여교잡하여 CBR의 교배번호를 부여하였다. 2001년 하계에 25 개체의 F1 식물체를 양성하고 2002년에 F2를 집단전개 하여 초형이 우수하고 찰벼이면서 향이 짙은 우수한 개체를 선발하였 고 F3 ~ F6 세대까지 계통육종법으로 세대를 진전시키고, 병해충 에 강하고 찰벼이면서 향이 짙고 재배안전성이 높은 계통을 선발하였다(Fig. 1). 세대를 진전시키면서 병해충 및 미질을 검정 하여 우량계통을 선발 고정 시켰다. 2007년 ~ 2008년 생산력 검정 예비시험과 특성검정을 실시하여 양질이면서 흑색이고 향기가 있는 찰벼인　CBR11-2-4-3을 선발하여 L3로 계통명을 부여하였다. 2009년 ~ 2010년에 생산력 검정을 실시한 후 2010 ~ 2012년 3년간 지역적응시험을 실시한 결과, 흑색 찰벼 이면서, 현미의 안토시아닌 등 기능성 물질 함량이 높고, 수량성이 높은 것으로 평가되어 2012년 12월 직무육성품종으로 선정되어 ‘청 풍흑향찰’로 명명하였다. ‘청풍흑향찰’의 육성과정은 Fig. 1과 같다.

고유특성
잎은 ‘흑선찰’과 비슷한 녹색이고 길이는 ‘흑선찰’보다 길고 너비는 비슷하고 초형은 반직립이다. 줄기의 굵기는 ‘흑선찰’보 다 굵고, 강도가 강한 편이며 분얼개도는 보통이다. 이삭은 추출 이 양호하고 착립밀도는 보통이고, 까락은 벼알 선단부분에 약간 있다. 탈립이 잘 안되며 부선은 황백색, 영색은 담자색이고, 현미 의 장폭비는 2.30으로 ‘흑선찰’보다 길다(Table 1, 2).

출수기 및 주요 농업적 특성
‘청풍흑향찰’의 출수기는 보통기 보비재배에서 평균 8월22일 로 ‘흑선찰’보다 20일 늦은 중만생종이다. 주요농업적 특성은 간장은 85cm로 ‘흑선찰’에 비해 18cm 길고 수장은 22cm로 2cm길었다. 주당수수는 15개로 ‘흑선찰’과 같았으며, 이삭당 벼알수는 115개로 ‘흑선찰’보다 23개 많았다. 등숙비율은76.5% 로 흑선찰보다 약간 떨어졌으나, 현미 천립중은 27.2g으로 ‘흑선 찰 23.4g’보다 무거웠다(Table 3).

생리장해 및 병해충 저항성
‘청풍흑향찰’은 노화묘 늦심기에서도 위조현상이 나타나지 않으며, 성숙기에 하엽 노화의 진행속도가 늦었다. 벼키는 흑선 찰에 비해 18cm정도 컸지만 줄기가 강하여 포장에서도 도복에 강한 경향을 나타내었다. ‘청풍흑향찰’은 ‘흑선찰’과 같이 도열 병에는 저항성을 나타냈으나 흰잎마름병, 바이러스병 및 해충에 대한 저항성은 없는 것으로 나타났다(Table. 4).

미질 및 기능성 물질
‘청풍흑향찰’의 종피색은 ‘흑선찰’보다 진한 흑자색을 띄고 있는 찰벼이다. ‘청풍흑향찰’의 도정수율은 78.6%로 흑선찰보 다 약간 낮았다. 단백질 함량은 6.6%로 흑선찰보다 낮은 편이며, ‘흑선찰’에 비해 향이 매우 진하게 나타났다. 쌀 전분의 호화특성 을 나타내는 아밀로그램 분석(Choi et al. 2012)에서는 식미와 높은 관련성이 있는 강하점도(Breakdowm)가 390으로 흑선찰 의 216보다 높게 나타나 밥맛이 좋은 경향이었다(Table 5). 기능 성물질 함량은 ‘흑선찰’대비 안토시아닌 함량은 258mg/100g으 로 59% 높았으며, 총폴리페놀함량은 229mg/100g으로 26.7% 높았다. 플라보노이드 함량도 398mg/100g으로 ‘흑선찰’에 비해 36.6% 높게 나타났다. ‘청풍흑향찰’의 항산화활성은 ‘흑선찰’ 대비 DPPH라디컬소거능은 3.6%, ABTs 라디컬소거능은 7.9% 높게 나타났으며, 혈당강하능력은 66%로 23.3%높게 나타났다 (Table 6).

수량성
보통기 보비재배로 2010년부터 2012년까지 3년간 수행한 지역적응시험에서는 중부평야지 충주, 청원과 남부중산간지 보 온 등 3개소의 현미 평균 수량은5.39 MT/ha로 ‘흑선찰’ 대비 44% 증수되었다(Table 7).

재배상 유의점
중만생종 흑색향찰벼 품종인 ‘청풍흑향찰’은 장간종이므로 질소질 비료 과용 시 등숙저하, 숙색불량, 도복 및 병해충 발생이 우려되므로 적정 균형시비를 하여야 하고 적기 기본방제를 하여 야 한다. 등숙기간이 길어 수확 전 물떼는 시기를 늦추어야 미질 저하를 막을 수 있다.
‘청풍흑향찰’은 충북농업기술원 작물연구과에서 2012년도 에 육성한 향기가 있는 흑색 찰벼 품종이다. 고품질벼인 ‘신동진 벼’와 흑색 향찰벼인 흑선찰’을 각각 모본과 부본으로 인공교배 하고 반복친인 ‘흑선찰’을 여교잡하여 F6 세대 까지 계통육종법 으로 세대를 진전시켜 우수한 개체를 진전시켜 CBR11-2-4-3계 통을 선발하고 2009년에 L3로 계통명을 부여하였다. 주요 농업 적 특성을 살펴보면, 생육기간은 168일로 길며, 주당수수는 15 개, 수당립수는 115개, 등숙률은 76.5%, 천립중은 27.2g으로 대립이며 향이 짙은 특징을 나타낸다.
현미중 안토시아닌 함량은 ‘흑선찰’에 비해 높게 나타났으며, 수량성은 3개년 간 실시한 지역적응시험 보통기 보비재배 3개소 에서 현미수량이 5.39MT/a 이었다. ‘청풍흑향찰’의 재배적지는 중부평야지나 남부중산간지가 적당할 것으로 판단된다.
