Consumption of oat-based food is rapidly increasing due to consumer preference for functional foods. Until now, breeding is focused on the development of naked oat for food in Korea. Hulled oats recognized as forage have strong merits for yield and stability in cultivation except milling properties. Lately, advanced milling technology provides an opportunity to use hulled oats for food. Therefore, the processing characteristics of hulled oats are of great importance for food use. This study examined the physicochemical properties and dietary fiber of 9 Korean oat cultivars (4 hulled oats as compared with 5 naked oat cultivars). Findings showed that the color values (i.e. L and W) of hulled oat cultivars in seed and flours are lighter than the naked oats. The protein and ash contents are higher in hulled oats as compared with naked oats. The unsaturated fatty acid (USFA), mainly C18:1, C18:2 were 80~83%. USFA of ‘Daeyang’ (DY, naked) and ‘Jopung’ (JP, hulled) were 82.0 and 81.9% respectively. Total Dietary fiber and Total β-Glucan contents ranged from 13.2 to 20.6% and from 3.4 to 4.1% in oat flours. The ‘DY’ (4.10%, naked), ‘JP’(4.09%, hulled) and Highspeed (4.07%, hulled) showed high levels of β-Glucan contents. Findings of the study will provide useful information in extending the use of hulled oats for food.

서 언

전 세계 식품 트렌드는 “건강” 과 “환경”으로 건강기능 향 상과 원료 안정성을 고려한 식품소비가 급격히 늘고 있다. 이 와 관련하여 국내에서도 귀리 종실의 높은 영양학적 가치로 인해 식용으로 소비가 급격히 늘고 있다(Han et al. 2008, Han et al. 2009). 귀리 도입량은 2011년 3,890톤 이었으나 2012년 4,548톤, 2013년 5,019톤으로 크게 증가하였고 2015 년 상반기 귀리 수입량은 20,000 톤(700만 달러)으로 지난해 대비 수입량이 478.1%로 폭발적으로 증가하였다(Customs import and export trade statistics 2015, KDI Economic Information Center 2015). 국내 귀리 소비가 크게 증가하면 서 2006년 2 ha 였던 재배면적은 2014년 350 ha로 175배 증 가하여 국내 생산량도 2006년에 6 톤, 2011년에 600 톤, 2012년에 820 톤으로 꾸준히 증가하고 있다(Fig. 1.).

귀리는 다른 곡물에 비해 단백질과 지질이 풍부하고, 불포 화지방산이 다량 함유 되어 있다. 라이신 등 필수아미노산이 풍부하며, 비타민 B군, 비타민 E, 미네랄도 풍부하며, 식이섬 유인 베타글루칸도 다량 함유되어 있어 식품학적 가치가 매 우 높은 작물로 인식되고 있다(Han et al. 2014, Marshall et al. 1992). 또한 귀리에는 다양한 종류의 폴리페놀이 존재하 며, 귀리의 특이적인 항산화 성분인 아베난스라마이드류는 아 토피피부염에 효능이 있는 것으로 알려져 있다(Cai et al. 2011, Dimberg et al. 1993, Peterson et al. 2002). 귀리 섭 취가 혈중 콜레스테롤을 감소시켜 성인병 예방에 효과가 있 다고 보고 되어 있으며, 미국의 FDA는 식품 라벨에 통귀리 식품 섭취가 심장질환의 위험감소와 관련이 있다는 문구를 표시할 수 있도록 허가하였다(FDA 1997). 이처럼 귀리의 영 양학적 및 기능성은 귀리를 이용한 다양한 식품소재로 이용 되고 있으며, 관련된 가공제품 시장은 지속적으로 증가할 것 으로 예상된다.

귀리는 오트밀과 같은 압맥, 후레이크 형태로 다른 곡물과 혼합형태로 이용되어 가루형태로 가공된다(Bryngelsson et al. 2002). 귀리 종실에는 일반적으로 내영과 외영이라는 껍 질이 있어 가공시 이것을 제거해야 하는 노력이 필요하다. 이 와 관련하여 귀리는 탈곡작업을 할 때 영이 제거되지 않는 겉 귀리와 영의 제거가 용이한 쌀귀리로 나뉘어진다(Han et al. 2008, Han et al. 2014). 국내에서 쌀귀리는 겉귀리에 비하여 영을 제거하기 위한 공정이 적어, 수확 후 가공 노력이 적게 들어 영이 잘 벗겨지는 탈부율이 높은 쌀귀리 품종을 육종하 는 것이 목표였다(Chae et al. 2008, Han et al. 2008, Han et al. 2014, Park et al. 1995). 그러나 최근 가공기술의 발달 로 겉귀리의 영을 제거하는 비용과 노력이 적게 들고 도정수 율도 높아지고 있다. 또한 겉귀리는 쌀귀리에 비해 수확량이 많고 재배안정성이 높은 편으로 알려져 있다(Pirjo 1994). 이 처럼 겉귀리에 대한 식용으로의 이용가치를 판단하는 것도 매우 중요하지만 국내에서 이와 관련된 연구는 전무한 실정 이다.

지금까지 국내 귀리에 대한 연구는 육성된 귀리 품종의 농 업적인 특성이 주를 이루고 있으며(Han et al. 2008, Han et al. 2014, Heo et al. 2003, Park et al. 1995), 선양귀리(2003 년 육성)와 밀, 보리와의 종실품질 특성 비교, 시판되고 있는 오트밀, 오트밀가루 등 제품에 대한 이화학적 특성(Chae et al. 2008), 귀리가루 첨가에 따른 쿠키 적성(Lee et al. 2002) 등 가공과 품질에 관한 연구는 매우 한정적으로 이루어졌다. Jeong et al. (2003)은 귀리 베타글루칸에 대해 ‘말귀리’(1994 년 육성), ‘올귀리’(2010년 육성)를 대상으로 입도별 함량을 분석하고 입자가 커질수록 증가하는 경향이 있음을 보고된 바 있다. 그러나 최근 국내 육성된 귀리 품종에 대한 이용성 을 제고하기 위한 품질 및 기초성분에 대한 자료는 미흡한 실 정이다.

따라서 본 연구에서는 국내 육성 쌀귀리 5품종과 겉귀리 4 품종을 대상으로 외관품질, 주요성분의 함량을 분석하여 식품 소재를 위한 기초자료를 제공하고자 한다.

재료 및 방법

실험 재료

귀리 이화학적 특성 및 베타글루칸 함량 분석은 농촌진흥청 에서 육성한 쌀귀리 5품종과 겉귀리 4품종을 사용하였다 (Table 1). 국립식량과학원 시험포장인 익산(쌀귀리 품종)과 김제(겉귀리 품종)에서 2013년 10월 중순에 파종하여 2014년 6월에 수확하였고, 농촌진흥청 표준 재배법에 준하여 재배하 였다. 수확한 귀리는 분석 전까지 14°C 저장고에 저장되었다.

SE, DY, CY, SY, JM of grain yield were tested four location i.e. Gimjae, Iksan, Jeongeup, Jinju for three years. SH, DH of grain yied was tested in Suwon, Unbong, Iksan. JP was tested Gimjae in 2014. HS of grain yied was tested only Jeju location.

쌀귀리는 탈곡 후 겉껍질(영)이 벗겨지는 탈부율이 100% 에 달하기 때문에 정선과정만 거쳤고, 겉귀리는 겉껍질을 벗 기기 위해 간이 도정기(FC2K, Yamamoto, Japan)을 이용하 여 도정하였다. 도정된 시료는 분쇄기(HMF-3100S, 한일, Korea)를 이용하여 분쇄 후 1.0 mm 체를 통과한 시료를 사 용하였다.

외관품질

겉귀리의 도정수율은 도정 전 무게와 도정 후 무게의 비율 로 계산하였고 2반복으로 측정하였다. 귀리 종실의 품위는 Caliper(Model CD-15CP, Mitutoyo Corp., Japan)를 이용해 길이(Length), 너비(Width), 폭(Thickness) 특성을 조사하고, 천립중 무게를 측정하였다. 모든 시료는 10반복으로 측정하 였다.

귀리 종실 및 분쇄가루의 색도는 색차계(Minolta, CM-3500d, Japan)를 이용하여 측정하였으며, 명도(lightness, L), 적색도 (redness, a), 그리고 황색도(yellowness, b) 값으로 나타내었다. 표준 백색판의 L, a, b 값은 각각 95.8, -0.1, -0.4 이었다. 백도 는 백도계(C-300-3, Kett, Japan)를 이용하여 5반복으로 측정하 였다.

이화학적 특성

수분함량은 modified A.O.A.C. (1990)법을 변형시켜 건조 기((DS-80-2, 다솔과학)에서 48시간 건조 후 건조 전 무게와 건조 후 무게를 비교하여 측정하였다.

조단백 함량은 micro-Kjeldahl법(NICS 2009)으로 분쇄 시 료 0.2 g을 단백질 분해관에 넣고 황산 10 mL와 촉매제를 첨 가한 후 Kjeltec^™ 2200 auto distillation unit (Foss Tecator, Huddinge, Sweden)을 이용하여 420°C에서 40분간 분해하고 30분간 상온에서 냉각시키고 나서 질소함량을 측정한 후 조 단백 함량을 구하였다.

조지방 함량은 Soxtherm automatic system (Gerhardt Soxtherm 2000, Hoffmannstre, Germany)을 이용하여 정량하 였다(NICS 2009). 분쇄 시료 3 g을 비등석을 넣은 extraction thimble에 담고 n-hexane 140 mL를 첨가 후 180°C에서 30 분간 가열하였다. 추출은 80분 동안 5회 이루어졌으며, 용출 된 조지방을 담고 있는 수기를 105°C에서 1시간 동안 건조 후 방냉하고 무게를 측정하여 조지방의 함량을 구하였다.

조섬유 함량은 Fibertec 2010 auto analyzer (Foss Tecator, Sweden)를 이용하여 분석하였다(NICS 2009). 분쇄 시료 1 g 을 crucible에 넣고 무게 측정 후 미리 가열된 1.25% H₂SO₄ 를 이용하여 30분간 끓인 후 증류수로 세척하고 나서 1.25% NaOH를 이용하여 다시 위 과정을 반복하였다. 산, 염기가 처 리된 시료를 포함한 crucible을 105°C 건조기에서 1시간 건 조한 후 데시케이터에 옮겨 2시간 동안 방냉한 후 무게를 측 정하였다. 무게를 측정한 crucible을 전기회화로(DS-84E, Dasol scientific Co., Ltd, Korea)를 이용하여 500°C에서 3 시간 동안 회화시킨 후 2시간 동안 방냉 후 무게를 측정하여 조섬유 함량을 구하였다.

조회분 함량은 항량이 된 도가니에 분쇄된 시료 1 g을 취 하여 무게를 측정한 후 핫플레이트에서 회화하고, 전기회화로 (DS-84E, Dasol scientific Co., Ltd, Korea)를 이용하여 60 0°C에서 4시간 동안 회화시킨 후 2시간 방냉한 후 도가니의 무게를 측정하여 구하였다(NICS 2009). 조지방, 조단백, 조 섬유함량은 수분함량을 보정하여 최종 함량을 구하였다.

지방산 조성

귀리의 지방산 조성 분석은 변형된 Rafael & Mancha (1993)의 방법을 사용하였다. 분쇄시료 0.3 g의 분말시료에 methanol : heptanes : benzene : 2,2-dimethoxypropane : H₂SO₄(37:36:20:5:2, v/v)로 조제된 용액을 가하고 80°C로 가열하여 digestion 및 lipid transmethylation이 동시에 이루 어질 수 있도록 하였다. 가열이 끝난 single phase는 상온에서 냉각 후 fatty acid methyl esters(FAMEs)가 함유된 상등액을 capillary GC에 주입하였다. 지방산 분석에 사용된 GC system 은 HP6890 System 불꽃이온화검출기(Flame Ionization Detector : FID, HP Co., USA)이었고, 컬럼은 HP-Innowax capillary(0.25 μm i.d. × 30 m)를 사용하였다. 분석조건은 initial temperature 150°C, final temperature 280°C로 분당 4°C 증가되도록 하였고, carrier gas는 N₂를 분당 1.0 ml로 흘려주었다. 분석이 진행되는 동안 injector와 detector온도는 각각 250°C 및 300°C가 되도록 유지하였다. 표준 FAME mix(C14-C22)는 Supelco사(Bellefonte, USA) 제품을 사용 하였다.

식이섬유 함량

식이섬유 분석은 AOAC 방법에 의한 효소중량법으로 분 쇄 시료 1 g을 각각 30분간 효소분해(1단계 α-amylase, 2단 계 protease, 3단계 amyloglucosidase) 하였다. 효소처리를 통해 전분, 단백질 등을 분해한 후 증류수로 여과하여 물에 녹지 않는 잔여물(IDF)을 78% 알콜과 아세톤으로 세척하여 105°C 건조기에 넣고, 증류수에 여과되어 포집된 용액은 알 콜로 침전시킨 후 또다시 여과하여 78% 알콜과 아세톤으로 세척한 잔여물(SDF)을 105°C 건조기에 넣어 건조시켰다. 각 각의 IDF, SDF 잔여물은 105°C 건조기에서 24시간 건조시 켰다. 각각의 시료에 대해 단백질 함량과 회분(525°C에서 5 시간이상) 함량을 구하여 보정하였다. 총 식이섬유(TDF) 함 량은 IDF, SDF를 각각 산출하여 두 값을 더하여 산출하였다.

귀리의 총 베타글루칸 함량은 Oat β-Glucan kit(Megazyme Pty. Ltd. Australia)를 이용하여 측정하였다. 분쇄 가루 0.5 g 에 50% EtOH 1 mL와 Sodium phosphate buffer 5mL을 추 가한 후 100°C 항온수조에서 2분간 반응 시킨 다음 다시 3분 간 반응 후 교반하였다. 추출물은 40°C 항온수조에서 5분 냉 각 후 Lichenase 200 μL 넣고 혼합 한 다음 40°C 항온수조 에 1시간 반응시킨 후 즉시 찬물에 냉각시킨 후 증류수 24 mL 첨가하여 30 mL로 정용하였다. 추출물을 원심분리한 (3000 rpm, 10분) 상징액 100 μL에 β-Glucosidase 100μL 를 넣고 혼합하였다. 이때 blank는 Glucosidase 대신 Sodium acetate buffer를 사용하였다. 시료는 최종 40°C 항온수조에 서 15분간 incubation 시킨 후 각 tube에 Glucose oxidase/ peroxidase(GOPOD) reagent 3mL 첨가하고 다시 40°C 항온 수조에 20분 반응시킨 후 즉시 냉각시켜 각 반응이 끝난 시료 를 510 nm에서 흡광도를 측정하였다. 표준곡선은 100 ~ 500 ppm 농도의 β-glucan용액을 사용하였다.

호화양상

호화도는 rapid visco analyzer (RVA-3D, Newport Australia)를 이용하여 Jung et al.(2001)의 방법으로 분석하 였다. 분쇄 시료 3 g 칭량한 후 기기전용 알루미늄캔에 담고 증류수 25 mL 첨가하고 교반 후 분석 하였으며 50°C에서 1 분간 정치 후 3분 30초 동안 일정한 속도로 95°C까지 상승시 키고, 3분간 유지 후 다시 4분간 50°C로 냉각하여 1분 30초 정치하는 조건으로 3반복 측정하였다. 이를 통해 호화개시온 도(gelatinization temperature), 최고점도(peak viscosity), 최 저점도(hot viscosity), 최종점도(cool viscosity), 강하점도 (breakdown), 치반점도(setback)값을 얻었다.

통계 처리

실험치는 평균값과 표준오차로 표시하였다. 통계분석은 SAS 프로그램(Version 9.2, SAS Institute Inc., Cary, NC, USA)을 이용하였다. 평균간 비교를 위하여 분산분석(ANOVA)을 수행 하고, 유의성이 있을 경우 5% 유의수준에서 Duncan의 다중검 정을 실시하였다.

결과 및 고찰

국내 귀리 품종의 외관 품질

쌀귀리 품종이 겉귀리 품종보다 길이는 길고 두께가 두꺼 운 경향을 보였으나 너비와 두께는 귀리 품종간에 큰 차이를 보이지 않았다. 쌀귀리는 ‘조양’, ‘수양’ 품종이 겉귀리는 ‘동 한’, ‘조풍’ 품종이 길이가 길었다. 장폭비는 3.0~3.83 이었으 며, 장폭비가 3.0 이상일 때 장립종으로 판단 할 수 있으며 (Chae et al. 2008), 쌀귀리, 겉귀리 모두 장립종 이었으며, 겉 귀리는 비교적 3.0~3.38로 장립 비율이 높지 않았으나 쌀귀 리의 ‘조양’과 ‘수양’이 3.58, 3.83로 매우 장립이었다. 귀리 천립중은 쌀귀리인 ‘대양’, ‘조양’ 품종이 가장 무거웠으며, 천립중은 쌀귀리가 겉귀리 보다 무거웠다(Table 2). ‘중모 2005’는 길이가 가장 짧았으며, 천립중도 작았다. 이는 품종 육성시 천립중과 경향이 일치하였다(Han et al. 2008, Han et al. 2014, Heo et al. 2003, Park et al. 2008).

귀리 종실의 명도(Lighetness, L)는 겉귀리가 쌀귀리 품종에 비해 전체적으로 밝았으며, ‘하이스피드’가 가장 높았고, 쌀귀 리에서는 ‘조양’, ‘선양’ 품종이 높았다(Table 3). 황색도 (yellowness, a)는 ‘선양’(쌀귀리), ‘삼한’(겉귀리)이 높았으며 적색도(redness, b)도 겉귀리가 쌀귀리에 비해 전체적으로 높 았으며, 겉귀리는 ‘동한’이 높았고, 쌀귀리에서는 ‘조양’이 높 았다. 백도(Whiteness)에서도 겉귀리가 쌀귀리보다 전체적으 로 높았으며, 쌀귀리에서는 ‘선양’, ‘대양’이 높게 나타났다.

귀리 분말가루의 명도, 백도는 겉귀리가 쌀귀리에 비해 전 체적으로 높았으나 황색도(a)와 적색도(b)값은 낮았다. 명도 는 ‘삼한’, ‘동한’이 높았으며, 쌀귀리에서는 ‘선양’, ‘조양’이 높았다. 황색도(b)는 ‘선양’, ‘조양’이 적색도(a)도 ‘조양’ 품 종이 높았다. 백도는 ‘하이스피드’, ‘삼한’이 높았으며, 쌀귀 리 중에서는 ‘선양’이 높았다(Table 3). 현재 국내에서 귀리는 혼반용, 선식가루로 주로 이용되고 있어 외관 품질로 색도가 매우 중요한데 종실, 가루 모두 겉귀리가 쌀귀리에 비해 품질 이 떨어지지 않는 것으로 보인다.

국내 육성 품종의 이화학적 특성

지방함량은 5.5 ~ 10.0% 였으며, 겉귀리가 전체적으로 쌀귀 리보다 지방 함량이 낮았다. 쌀귀리는 ‘조양’(10.0%)이 가장 높 고, ‘대양’(8.5%)이 가장 낮았으며, 겉귀리는 ‘동한’(9.4%)이 높 고, ‘삼한’(5.5%)이 가장 낮았다(Fig. 2.). 지금까지 알려진 외국 품종도 5-9%의 지방함량을 가지고 있으며, 품종간 차이가 큰 것 으로 보고 되었다(Flander et al. 2007, Gangopadhyay et al. 2015). 귀리는 다른 곡물에 비해 단백질 함량이 많으며, 총단백 질 함량에 관계없이 라이신 함량은 떨어지지 않고 일정하여 좋 은 단백질로 알려져 있다(Rasane et al. 2015). 기존 문헌을 보 면(Robert et al. 1985) 단백질 함량이 11-15%로 존재하는데 국 내육성 품종 ‘선양’(쌀귀리), ‘삼한’(겉귀리)이 16.4, 16.9%로 높 았으며, 겉귀리가 쌀귀리보다 높은 경향을 보였다. 쌀귀리인 ‘조 ㅅ양’(11.6%)과 ‘중모2005’(12.5%)가 가장 낮았다. 회분은 1.8 ~ 2.3% 수준 이었으며, 겉귀리인 ‘삼한’, ‘동한’이 2.3%로 높았 다. 조섬유는 식품 및 사료 분석시 뜨거운 황산과 수산화나트륨 을 넣었을 때 용해되지 않는 유기성분으로 셀룰로오스, 헤미셀 룰로오스의 일부, 리그닌, 펜토산으로 구성되어 있어 소화되기 어렵기 때문에 영양소로는 취급되지 않는다. 식품종류에 따라 다르지만, 조섬유의 약 3 ~ 5배가 식이섬유량의 함량을 추정할 수 있다고 하였다(Park et al. 1996). 조섬유 함량은 1.2 ~ 1.5% 수준이었으며 귀리 품종간에 큰 차이를 보이지는 않았다.

지방산 조성

귀리의 지방산 조성은 올레인산(C18:1, Oleic acid, 38.1 ~ 47.9%), 리놀레산(C18:2, Linoleic acid, 32.6 ~ 40.4%), 팔미 트산(C16:0, Palmitic acid, 14.8 ~ 18.7%), 스테아르산(C18:0, Stearic acid, 1.5 ~ 2.6%), 리놀렌산(C18:3, Linolenic acid, 0.8 ~ 1.5%) 순이었으며(Fig. 3A), 불포화지방산은 79.7 ~ 83.0% 이었으며, 올레인산과 리놀레산이 대부분을 차지하고 있다(Fig. 3B). 겉귀리는 필수지방산인 리놀레산, 리놀렌산이 쌀귀리에 비해 높았으며, 쌀귀리는 올레인산 함량이 높았다. ‘대양’품종이 83.0%로 가장 불포화지방산 함량이 높고, ‘조 풍’(82.0), ‘수양’(81.9), ‘동한’(81.9), ‘조양’(81.0%) 순으로 높았다. 호주 육성 12품종의 지방산 조성을 보면 올레인산은 37.9 ~ 42.6%, 리놀레산은 35.9 ~ 39.9% 범위를 가졌고 (Zhou et al. 1988), 국내산 귀리 또한 현재까지 알려진 미국, 캐나다, 핀란드 등의 육성 품종의 지방산조성과 비슷한 경향 을 보였다. 그러나 ‘삼한’은 리놀레산(40.4%)이 올레인산 (38.1%)보다 함량이 많았는데 호주의 ‘Pallinup’ 품종도 리놀 레산 39.9%, 올레인산 38.0%로 지방산조성이 품종 및 재배 지역에 따라 변화할 수 있다고 하였다(Martinez et al. 2010, Zhou et al. 1988). 올레익산은 쌀귀리인 ‘조양’, 리놀레산, 레 놀렌산은 겉귀리인 ‘삼한’, ’하이스피드’ 팔미트산은 ‘삼한’, 스테아르산은 ‘선양’이 가장 높았다. 귀리의 지방은 밀과 같 은 곡류(2 ~ 3%)에 비해 많은 편으로(5 ~ 10%) 사료용으로 이용될 때는 높은 에너지를 생성하기 때문에 함량이 많은 것 이 좋을 수 있다. 그러나 높은 지방함량과 유리지방산은 식용 으로 이용시에는 다양한 가공에 의한 산패, 불쾌한 냄새 등을 유발할 수 있어 제품 생산시 저해 요소가 될 수 있으며, 저장 에도 문제가 될 수 있다고 알려져 있다. 그러나 귀리는 항산 화성분인 비타민 E, 다양한 페놀화합물이 존재하여 약 1년간 저장에는 큰 문제 없다고 보고 하였다(Keying et al. 2009). 겉귀리는 ‘동한’, ‘조풍’ 품종이 불포화지방산이 높았고, 필수 지방산인 리놀레산과 리놀렌산이 많으며, 상대적으로 지방함 량이 낮은 특성을 보였다. 쌀귀리는 ‘대양’이 불포화지방산이 높았으며, 리놀레산 함량이 상대적으로 많았다.

식이섬유와 베타글루칸 함량

식이섬유는 인간의 소화효소로 분해되기 어려운 난소화성 고분자물질을 말하며, 셀룰로스, 헤미셀룰로스, 리그닌, 펙틴, 검 등의 식물성분과 키틴, 키토산 과 같은 동물성분까지 포함 하고 있다. 식이섬유는 배변활동, 콜레스테롤 조절, 식후혈당 상승억제에 도움을 주며, 이와 관련된 결장암, 당뇨병, 변비 고혈압과 같은 질병 예방과 치료 가능성이 있어 영양소에 비 교될 만큼 중요하게 인식되고 있다(Amundsen et al. 2003, Park et al. 1996, Rasane et al. 2015). 특히, 귀리는 식이섬 유가 많은 곡류로 알려져 있으며, 귀리의 수용성 베타글루칸 이 심혈관질환을 예방하는데 큰 기여를 하는 것으로 알려져 있다(FDA 1997, Rasane et al. 2015). 국내 육성 귀리의 총 식이섬유(TDF) 함량은 13.2(‘중모’) ~ 20.6%(‘대양’) 함유되 어 있고, 쌀귀리인 ‘대양’, ‘조양’ 품종이 20.7, 20.6%로 가장 많았다(Fig. 4A) 수용성 식이섬유(SDF)도 ‘대양’, ‘조양’ 품 종이 4.0%로 가장 많았고, ‘선양’이 2.51%로 가장 낮았으며 겉귀리는 2.97 ~ 2.81% 함량 분포를 보였다. 총식이섬유는 품종별로 큰 차이를 보였으나, 수용성 식이섬유는 선양을 제 외하고 쌀귀리가 겉귀리에 비해 많이 함유되어 있는 경향을 보였다. 불용성 식이섬유(IDF)도 ‘대양’과 ‘조양’ 품종이 각 각 16.7%와 16.3%로 높았다. 식이섬유는 수용성 불용성 모 두 쌀귀리인 대양과 조양 품종이 높았다.

식이섬유의 일종인 귀리 베타글루칸은 비전분성 다당류로 체내 혈중 콜레스테롤 저하시키고(Maier et al. 2000, Newman et al. 1989), 당류의 소화흡수를 억제시키는(Vachon et al. 1988) 등 다양한 생리활성 효과가 있는 것으로 알려진 기능성 물질이다. 국내육성 품종의 베타글루칸 함량은 3.4% ~ 4.1% 이었으며(Fig. 4B), 쌀귀리는 ‘대양’ 품종이 겉귀리는 ‘하이스 피드’, ‘조풍’ 품종이 4.1, 4.09, 4.07%로 높았다. 베타글루칸 함량은 유전 및 환경조건에 따라 차이가 있으며, 유전적 인자 가 더 중요하게 영향을 미치는 것으로 알려져 있어 품종간에 차이가 크게 나타났다(Bourne & Wheeler 1984). 일반적으 로 귀리는 베타글루칸이 3 ~ 4% 함유되어 있는 것으로 알려 져 있는데, 국내 육성 품종이 비교적 높은 편이다. 최근 베타 글루칸이 2% 증가된 귀리 품종 ‘Betagene’(미국, 위스콘신 대)이 개발되었는데(Mourtzinis et al. 2012, Mourtzinis et al. 2014) 이를 영양학적 관점에서 보면 귀리 가공제품에서 베타글루칸 함량이 20% 증가한 것에 해당한다. 이처럼 국내 에서도 외국산과 차별화하고 부가가치 향상을 위해서 고기 능성인 베타글루칸 함량이 증진된 쌀귀리를 육성할 필요가 있다.

국내 육성 품종의 호화양상

Rapid visco analyzer를 통한 호화양상 측정시 강하점도는 호화 중 열, 전단에 대한 저항성과 높은 상관을 보이고, 최종 점도는 밥을 했을 때 식미를 느끼는 점도로 낮을수록 부드러 움을 느끼게 되고, 치반점도는 전분의 노화 경향을 반영하는 것으로 간접적으로 전분의 호화특성을 예측할 수 있는 값이 다(Chun et al. 2005). 최고점도는 쌀귀리는 ‘대양’과 ‘조양’ 이 가장 높았으며, 겉귀리는 ‘삼한’, ‘하이스피드’가 높았다 (Table 4). 강하점도는 겉귀리는 ‘삼한’, ‘동한’이 높았고, 쌀 귀리에서는 ‘대양’, ‘선양’이 높게 나타났다. 치반점도는 쌀귀 리인 ‘조양’과 ‘수양’이 낮아 취반 후 딱딱하게 굳는 특성이 상대적으로 느릴 것으로 보인다. 호화개시온도는 ‘삼한’(91. 9°C), ‘대양’(92.7°C)이 가장 낮아 다른 품종보다 낮은 온도에 서 호화가 시작되는 것으로 보인다. 국내에서 귀리는 혼반용 으로 주로 이용되고 있어 호화특성이 중요한데 쌀귀리인 ‘대 양’과 겉귀리인 ‘삼한’ 품종이 비교적 최고점도가 높고 호화 개시온도, 치반점도가 낮아 호화특성이 좋을 것으로 보인다.

향후 국내 육성 귀리의 소비 확대를 위해 특산단지 조성 및 식품소재 다양화를 위해 재배 년도, 지역에 따른 품질 특성 및 귀리 특이적인 기능성 성분에 대한 관련 연구가 더 필요할 것이다.

적 요

소비가 폭발적으로 증가하고 있는 귀리 관련 식품 수요에 대처하기 위해 국내 육성 품종의 식용 및 가공소재로 이용하 기 위한 품질 특성이 매우 중요하다. 본 연구에서는 겉귀리의 식용으로 이용성을 제고하고, 최근 국내 육성 귀리 품종의 식 품소재 확대를 위해 쌀귀리 5, 겉귀리 4품종을 대상으로 외관 품질, 이화학적 특성, 베타글루칸을 포함한 식이섬유 함량을 분석하였으며, 그 연구 결과를 요약하면 다음과 같다.

귀리 종실 및 가루의 L값, 백도값이 겉귀리가 쌀귀리에 비해 전체적으로 밝았으며, 겉귀리인 ‘하이스피드’가 가장 높 았다. 겉귀리는 쌀귀리에 비해 지방함량은 적고 단백질 함량 은 많았다. 지방산 조성은 C18:1, C18:2, C16:0, C18:0, C18:2 순이었으며, 불포화지방산은 79.7 ~ 83.0% 수준이었 으며, 쌀귀리인 ‘대양’(83.0), 겉귀리인 ‘조풍’(82.0)%이 불포 화지방산이 높았다.
총 식이섬유는 품종별로 차이를 보였으며, 총 식이섬유 함량은 13.2(‘중모’) ~ 20.6%(‘대양’)이었으며, 수용성 식이섬 유도 쌀귀리인 ‘대양’, ‘조양’ 품종이 4.0%로 가장 많았다. 베 타글루칸 함량은 3.4% ~ 4.1% 이었으며, ‘대양’(쌀귀리), ‘하 이스피드’(겉귀리), ‘조풍’(겉귀리) 품종이 4.10, 4.09, 4.07% 로 가장 많았다.
전분의 호화특성은 쌀귀리는 ‘대양’, 겉귀리는 ‘삼한’ 품 종이 혼반용으로 좋은 특성을 가지는 것으로 판단되었다.
